What. A. Wedding.

When we get an enquiry for a two-day wedding we know we are in for a good time as caterers, however nothing could have prepared us for just how spectacular Caroline & Richard’s (aka Caks and Rich) wedding truly was!

From the very first enquiry, Caroline and Richard knew exactly what they wanted. With Caroline running her own events business down in London, there was absolutely no pressure on us to make sure that their day was planned to perfection!

The tasting was a great opportunity for them both to make sure they were happy with their menu – if only we could bottle their enthusiasm for every dish that was presented to them we’d be running off of excitement for the rest of the year! Paul Rowley himself was on hand to serve up mouth-watering canapes, very individual mains and classic (also their favourite) desserts. It was safe to say that the menu was one to be envious of but completely represented them as a couple which is always something we strive to do as one of the North West’s finest caterers.

The Wedding Weekend!! Located at one of our most favourite Lake District venues, Silverholme Manor, the grandest of Sperry Tents greeted us in the bottom field overlooking stunning views of Lake Windermere. This was to be our home for two days and what a home away from home to have! Caroline had told us how brilliant the space was going to be but no until could we see with our eyes would we believe it!

The drinks reception was held up at the house where all the guests swarmed all eager to for a drink to quench their thirst and to grab a picture with the new Mr & Mrs Zoers. With an ever more stunning backdrop,  drinks were flying out and canapes were devoured in seconds. Chicken goujons with our very own fruity madras mayo followed by Steak & Chip Skewers with a peppercorn sauce were by far the most popular! The  bride and groom had even requested that the chicken goujons had to be saved for them! Hoisin duck wraps were a lip smacking delight and the Sweet Chilli Prawns with Thai flavours & glass noodles went down a  storm as a light alternative for such a hot beautiful day!

Guests were soon ushered down towards the Sperry tent where the fun was really about to begin! The bar was stocked up to the nines – Caroline and Richard had supplied enough booze to feed a small army, but with Caroline’s side of the family being Scottish, it was proving to be just perfect! Richard’s Whisky Bar set up in the corner was a perfect addition to what was already going to be a messy night!

Starters of a rather healthy portion of Burrata served with Cumbrain Air Dried Ham, Halved Tomatoes, Fresh Mint, Lemon and Olive Oil Marinated Fennel lined the stomachs of the guests before father of the bride, Norri, made a loving yet hilarious speech.

A fillet of beef soon followed with Caroline & Richards favourite accompaniments of honey roasted carrots, purple stemmed broccoli, spring greens, mini fondant potatoes and a parsley & root vegetable puree. The empty plates were astounding! Caroline wanted to make sure that we looked after the guests with special dietary requirements just as much as we looked after guests having the full main course and we couldn’t agree more. We ensure that gluten free bread was available and to a high standard, any pregnant guests had their beef cooked all the way through and not pink in the middle as we would ordinarily serve it and all the veggies were served up our very own Risotto Primavera.

The dessert certainly didn’t disappoint as we served up a trio of Caroline & Richard’s favourite sweet treats: Sticky Toffee Pudding, Lemon Posset & Banoffee Pie! Yum, Yum and yum. No other words and again, clean plates and happy faces.

Speeches and the most up beat first dance ever, the party had started! 160 people up on their feet celebrating such a wonderful couple can take it out of you. So there was only one thing for it – bacon butties! The evening wedding food staple. Classic and we think, unbeatable! We had barely made it out of the kitchen and the trays were empty! Combine this with the newly weds wedding cake, sweet & savoury, just perfect.

Our time with Caroline & Richard wasn’t over there – we were back the next day to cure the hangovers with a BBQ and hog roast. Salads, breads & meats, just what the doctor ordered. Plenty of food saw round two creeping in! We unfortunately had to say our goodbyes to Caks & Rich and their gorgeous families. Catering for such lovely couple makes all the difference to our jobs, it almost doesn’t feel like a job!
